Vegetable Ciambotta
PREPARATION 10 min COOKING 30 min TOTAL TIME 40 min
Ingredients for 4 people:
350 gr zucchini
200 gr eggplant
100 gr chopped shallots or white onion
300 gr water
250 gr cherry tomatoes
basil
olive oil
salt & pepper to taste
(Parmiggiano to garnish optional)
Method
1.In a pan drizzle olive oil and add the diced onion. Then add the the veggies and sautè for about 5 minutes until they soften, then add the basil and water and let simmer on medium fire for 35 minutes.
2. Serve with grated parmesan on top.
Notes:
You can add red peppers as well
