Gingerbread Biscuits


PREPARATION 20 min COOKING 10-15 min TOTAL TIME 35 min

Ingredients:

3 eggs

4 cups plain flour

1 cup sugar

1 cup sunflower oil

6 spoons honey

2 spoons cinnamon

2 tsp baking soda

1/4 tsp nutmeg

1/4 tsp ground ginger

1 tsp orange zest (optional)

For the sugar icing

1 cup icing sugar

1 egg white


Method

1. Mix the eggs with the sugar well until the sugar incorporate. Then add the oil and honey and mix again.

2. In a separate bowl mix the rest of the dry ingredients: flour, baking soda, cinnamon, nutmeg, ginger and zest. Then start slowly to add the flour mixture to the egg mixture until you get a soft dough.

3. Then transfer the dough to a floured surface and lightly knead until the dough no longer sticks to your fingers. Add flour if needed. Then roll the dough to 0.5 cm and cut the biscuits.

4. Bake at 170 degrees for 10-15 minutes - keen an eye that they shouldn`t get too dark. The darker they ar the crunchier they will be. I prefer them softer. Enjoy.


Notes:

  • If you would like to decorate them with icing: Whisk the egg white with the icing sugar until you get stiff peak. Then pour into a piping bag and make a very small cut. Use it to decorate your biscuits. You can also add food colouring to the icing which is optional.
