Spinach Risotto
PREPARATION 10 min COOKING 20 min TOTAL TIME 30 min
Ingredients:
300 gr rice Arborio
400 gr spinach
1 /2 cup white wine
1 cup vegetable broth
1 onion
olive oil
salt & pepper to taste
Parmiggiano to garnish
Method
1.In a pan drizzle olive oil and add the diced onion. Then add the washed spinach and sautè until it softens, then blend it to a smooth cream.
2. Add to it the rice and wine, stir until the wine evaporate. Add the vegetable broth and let it cook on slow fire for about 15 minutes. Add the grated parmiggiano and serve!
Notes:
You can add a bit of cream cheese to it to make it creamier
