Brioche Braids


PREPARATION 10 min COOKING 20 min TOTAL TIME 30 min +2h 20min proofing

Ingredients:

100 ml milk

125 gr yoghurt

90 gr sugar (coconut or normal)

80 gr sunflower oil

1 lemon zest

1 egg

500 gr plin flour

7 gr dried beer yeast


Method

1.Mix the flour with the yeast and 2 spoons from the sugar quantity. In another bowl mix the milk, yoghurt, rest of the sugar, oil, the egg and the lemon zest. Then start adding a bit of the flour until it mixes well and repeat until you finish the flour and you get an elastic dough.

2. Put the dough in a bowl and cut a cross on top, then cover with cling film and leave to levitate for about 2 hours. Once the dough is ready put on a flat surface with a bit of flour and with a roller pin roll it to 0,5 cm. Then start cutting the dough in lines about 1cm wide - then slice the lines in the middle so they get shorter.

3. Take 3 lines and start making the braids. You should get around 12 braids in total. Then put them on a baking paper on a tray and let them rest for another 20 minutes. Only then we can bake them at 180 degrees for about 20 minutes. Once you take them out drizzle a bit of water on top.


Notes:

  • If you want to give them a bit of sweetness you can top with powdered sugar.
