Biscuits with Pistachio Butter
PREPARATION 5 min COOKING 15 min TOTAL TIME 20 min.
Ingredients:
2 eggs
100 gr sugar
80 gr sunflower oil
320 gr plain flour
8 gr baking powder
nut butter to taste
(optional you can add grated lemon/orange zest)
Method
1.Whisk the eggs with the sugar. Then add the oil and whisk again. In a separate bowl mix the flour, baking powder (and zest). Start adding slowly the flour until it incorporates well.
2. You should get an elastic dough that won’t stick to your fingers. Transfer the dough on a lightly floured surface and work it just until it gets smooth. Then roll small equal sized balls and place in a baking tray. Bake for 15 min at 180 degrees. Once they are ready fill them up with your favourite nut butter! Enjoy!
Notes:
You can also add a tiny bit of jam on top
