Courgette Fritters


PREPARATION 15 min COOKING 10 min TOTAL TIME 25 min

Ingredients:

2 courgettes (grated)

1 egg

1 cup breadcrumbs

20gr parmesan cheese

30 gr grated mozzarella

olive oil

salt & pepper to taste


Method

1.Start by grating the courgettes. Add the salt and stir - leave for 5 minutes and then drain well all the water. Add to it the grated cheese and a spoon of the breadcrumbs.

2.Add to the mixture the egg beat well and then add the rest of the crumbs by leaving some of it for the end. When you get a firm mixture to form "meatballs” use your hand to form and press them. Dust in the remaining crumbs. In a heated pan with a drizzle of oil cook for about 6-7 on a side turn occasionally so they don’t burn.


Notes:

  • Dry very good the courgettes

  • Serve with hummus or garlic yogurt dip
