Loaded Sweet Potatoes

Ingredients for 4 people:
2 Sweet potatoes
Leftover Bolognese Sauce or any topping of your choice
30 gr of grated Mozzarella cheese
parsley
salt & pepper to taste
(use any protein/vegetables/ sauce to garnish)
Method
1.Preheat your oven to 400°F (200°C). Scrub sweet potatoes and pierce them with a fork. Bake for about 40-50 minutes until tender. Once the sweet potatoes are tender, slice them open lengthwise.
2. Fluff the insides with a fork and spoon the Bolognese Sauce generously over each potato. Top with a generous layer of mozzarella cheese. Place the stuffed sweet potatoes back in the oven for an additional 10 minutes or until the cheese is melted and bubbly. Sprinkle with freshly ground pepper, garnish with chopped parsley, and get ready to indulge in a symphony of flavors!
Notes:
You can add guacamole or tzatziki on top for even more flavoured experience
