Easy Home Made Bread


PREPARATION 10 min (+20h to proof) COOKING 45 min TOTAL TIME 55 min

Ingredients:

500 gr plain flour (you can mix 300 gr plain flour and 200gr Canadian strong bread flour)

350 gr water (room temperature)

10 gr salt

5 gr honey or sugar

2 gr fresh yeast cube or 1 gr beer yeast


Method

1.Dissolve the yeast in a bit of water. In a big bow put the flour, salt and add all the water, water with yeast, honey (or sugar) and mix everything quickly with a fork. You should have a very sticky dough, leave it in the same bowl and cover with cling film for about 18 hours at a room temperature.

2. After the proof the dough will have risen and be full of holes. Put it on a floured surface and make 4 foldings (as shown on the picture). In a tray put a tea towel and cover it in flour then put on top the dough, with the folding facing the towel. Cover with another tea towel and let it rise another 2 hours.

3.Preheat the oven to 230° and put inside the cast iron pot. When it is hot enough take it out and with the help o the towel turn the dough inside. Now the folding should be facing up. Put the id and bake for 30 min, then remove the lid and let it bake well on top for 15/20 minutes.

4. Once you take it out of the oven let it cool of well on a rack for about 1-2 hours before you slice it. Enjoy this delicious bread as my grandma used to make it!


Notes:

  • I have used a cast iron pot 20cm for best results. Mine is from Aldi and it was great value for the price I paid.

  • You can freeze it sliced.

  • Timing guideline: If you prepare the dough around 8pm you will have the bread ready for lunch time the day after.
