Spaghetti with cream of courgette
PREPARATION 10 minutes COOKING 15 minutes TOTAL TIME 25 minutes
Ingredients for 4 portions:
2 medium courgette
360 gr spaghetti (or other pasta shape)
50ml double cream (optional)
Parmiggiano cheese
1 clove garlic
handful of fresh parsley
olive oil
salt & pepper to taste
Method
1.Peel and chop the courgettes, then add a drizzle of olive oil in the pan together with the garlic and courgettes. Let them cook for about 5-10 min by stirring occasionally. In the meantime in a pot with boiling water add your pasta and add salt to it.
2. Once your courgettes are soft and cooked blend them to a cream. Then in the same pan where you were cooking them add the double cream and the courgettes and a ladle of the pasta water. When it starts boiling add the drained pasta, season with salt/pepper and top with parmiggiano and parsley.Enjoy!
Notes:
Change the pasta shape to a smaller one and will be a perfect toddler meal
